Reuben Casserole by Neila

OK, for those of you who are going "What kind of dish is that?!" let me just say it tastes a lot better than it sounds. Also, for those of you saying that you don't like sauerkraut and that you wouldn't like this at all, I can honestly say that I said the same thing the first time someone mentioned it to me too. But I decided to give it a try and wouldn't you know it...I liked it! I don't like about half the ingredients in this recipe but, believe me, it's totally delicious.

I decided to post this recipe today because I heard somewhere that you're supposed to have sauerkraut on New Year's Day to have good luck throughout the year. So try it and good luck in the coming year.

2 pounds of sauerkraut
16 oz of corned beef
16 oz of mayonnaise
8 oz of shredded cheddar cheese
8 oz of shredded swiss cheese

Mix together sauerkraut, corned beef, mayonnaise, and half the cheese in a bowl.

Place in a casserole dish and put the remaining cheese on top. Put in oven at 350 until cheese is melted on top (usually about 20-30 minutes).

Serve hot, on mini rye bread or crackers
