8oz (225gm) of plain flower
1 level teaspoon of baking powder
Pinch of salt
2oz (50gm) of butter
2oz (50gm) of lard
3oz (75gm) of caster sugar
3oz (75gm) of currants
1 egg
2 tablespoons of milk

heat a heavy-based frying pan, or griddle if you're posh.

sieve the flour, baking powder and salt into a bowl.

cut up the lard and butter and add to the bowl.

mix with fingertips until mix looks like breadcrumbs.

stir in the sugar and currants.

beat the egg and add it to the mixture, along with the milk to make a firm, rollable dough ball.

roll out to and cut shapes using a shaped cutter.

bake on the frying pan for about 3 minutes either side.

leave cool and spreada little butter on one side. but they are best eaten warm with melted butter.
